Saundra N. Hopkins, wife, mother and loving grandmother, passed away May 31, 2016 after a long fight with Parkinson’s Disease.  Saundra was born May 7, 1939 in Logan, UT to Afton (Jones) and George L. Niederhauser.  Her family moved to Salt Lake City when she was a young girl and she graduated from East High School in 1957.    Saundra went on to attend the University of Utah and marry Bruce D. Hopkins in 1959.  She was a member of the Church of Jesus Christ of Latter-day Saints

Saundra worked in several fields but found her career calling when she went to work for Zions Bank in the mid-60’s.  She started work as a branch teller but eventually moved on to work as the Executive Assistant for the CEO.  Saundra cherished working with the many senior Zions’ executives, board members and business leaders that she came to know during her long tenure with Zions.

As a mother, Saundra was a devoted caregiver who poured much love and enthusiasm into developing her daughter and son.  Later in life, she was a loving grandmother who spent endless hours playing, teaching, singing, and just having fun with her grandchildren.  Saundra was always on hand for their many dance recitals, youth games and school activities—she never missed the opportunity to dote on her beloved grandkids.  We will always remember the special annual trips she organized every fall for her extended family at Sun Valley and Park City.

Saundra was an avid gardener who loved spending her days tending her beautiful flower beds, manicuring her perfect lawn and shrubbery or harvesting the bounty from her large vegetable garden.  She was also a gracious hostess who held many dinners, luncheons and receptions at her home over the years for her family, friends, neighbors and co-workers.

Saundra is survived by her husband Bruce, children John Hopkins (Amber) and Natalie Peterson (Scott), four grandchildren and siblings DeeAnn Taylor and Gordon Niederhauser.  She was preceded in death by her parents and siblings Nila Morzelewski and Robert Niederhauser.

The family wishes to thank Lisa Schofield, Sunrise Senior Living of Holladay and IHC Hospice for their special care.  We also know how appreciative Saundra was of the many friends and family who visited her during the past several difficult weeks. In lieu of flowers, the family suggests donations be made to Michael J Fox Foundation for Parkinson’s Research or Primary Children’s Medical Center.

Funeral services will be held on Saturday, June 4, 2016 at 12:30 p.m. at Cannon Mortuary, 2460 E. Bengal Blvd., (7600 S.), Cottonwood Heights.  A viewing will be held prior to the service from 11:00 a.m. to 12:30 p.m. at Cannon Mortuary.

Interment will immediately follow at Mountain View Memorial Estates (3115 E. 7800 S.), Cottonwood Heights.
